Ingredients
To whip up these scrumptious Taco Stuffed Shells, you’ll need the following ingredients:
- 12-15 large pasta shells
- 250g of minced beef (or a meat substitute for a vegetarian option)
- 1 small onion, finely chopped
- 1 clove of garlic, minced
- 1 tsp of taco seasoning (adjust to taste)
- 100g of cream cheese, softened
- 100g of grated cheddar cheese (plus more for topping)
- 200g of enchilada sauce
- Salt and pepper to taste
- Fresh coriander and sliced jalapeños for garnish (optional)
Instructions
Step 1: Prepare the Pasta Shells
Start by cooking the pasta shells according to the package instructions until they are al dente. Once cooked, drain and set them aside to cool while you prepare the filling.
Step 2: Cook the Filling
In a medium frying pan over a medium heat, add a splash of oil and sauté the chopped onion until it becomes translucent. Then, add the minced garlic and cook for another minute. Next, incorporate the minced beef into the pan, breaking it up with a wooden spoon. Sprinkle in the taco seasoning, salt, and pepper. Continue to cook until the beef is browned and cooked through, which should take around 5-7 minutes.
Once cooked, remove the pan from heat and let the mixture cool slightly before stirring in the softened cream cheese and grated cheddar. Ensure everything is well combined.
Step 3: Stuff the Shells
Preheat your air fryer to 180°C (350°F). Take a spoonful of the beef mixture and carefully stuff each pasta shell, placing them in a single layer in the air fryer basket. You can fit around ten shells at a time, depending on the size of your air fryer.
Step 4: Add Sauce and Cheese
Spread a layer of enchilada sauce over the stuffed shells. If desired, sprinkle additional cheddar cheese on top for an extra melty finish.
Step 5: Air Fry
Cook the stuffed shells in the air fryer for about 10-15 minutes, or until the cheese is bubbly and golden brown. Cooking times may vary based on your specific air fryer model, so keep an eye on them to prevent burning.
