  • 12-15 large pasta shells

  • 1 small onion, finely chopped
  • 1 clove of garlic, minced
  • 1 tsp of taco seasoning (adjust to taste)
  • 100g of cream cheese, softened
  • 100g of grated cheddar cheese (plus more for topping)
  • 200g of enchilada sauce
  • Salt and pepper to taste
  • Fresh coriander and sliced jalapeños for garnish (optional)

Instructions

Step 1: Prepare the Pasta Shells

Start by cooking the pasta shells according to the package instructions until they are al dente. Once cooked, drain and set them aside to cool while you prepare the filling.

Step 2: Cook the Filling

In a medium frying pan over a medium heat, add a splash of oil and sauté the chopped onion until it becomes translucent. Then, add the minced garlic and cook for another minute.
