Air Fryer Acorn Squash
Air fryer acorn squash makes for a delightful and healthy side dish, perfect for autumn gatherings or a comforting dinner at home. The natural sweetness of the squash is beautifully enhanced when roasted, resulting in a tender texture and caramelised edges.
Ingredients:
- 1 medium acorn squash
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional: cinnamon or nutmeg for added warmth

Begin by preheating your air fryer to 180°C (350°F).

Carefully cut the acorn squash in half from stem to tip. Scoop out the seeds and stringy bits with a spoon.

Brush the inside of each half with olive oil, then season with salt, pepper, and if desired, a sprinkle of cinnamon or nutmeg.

Place the squash halves in the air fryer basket, cut side up. Ensure they are not overcrowded to allow for even cooking.

Air fry at 180°C for about 25-30 minutes, or until the flesh is tender when pierced with a fork. You may want to check on the squash halfway through and give it a gentle shake for even cooking.
