• Spinach and Feta Parcels Recipe

    If you're looking for a quick and delightful snack or starter, spinach and feta parcels are a fantastic choice. Here’s how to make them.

    Ingredients:

    • 300g fresh spinach (or frozen, if that’s what you have)
    • 200g feta cheese, crumbled
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tbsp olive oil
    • 1 tsp dried herbs (such as dill or oregano)
    • Salt and pepper, to taste
    • 1 pack of puff pastry sheets
    • 1 egg, beaten (for egg wash)

    Method:

    1. Preheat the Oven: Start by preheating your oven to 200°C (180°C fan) or 400°F.

    2. Sauté the Vegetables: In a frying pan, heat the olive oil over a medium heat. Add the chopped onion and garlic, cooking until softened and translucent. If you're using fresh spinach, toss it in now and cook until wilted. If using frozen spinach, make sure to thaw and thoroughly squeeze out any excess moisture.

    3. Combine Filling: In a mixing bowl, combine the sautéed mixture with the crumbled feta and dried herbs. Season with salt and pepper, keeping in mind that feta can be quite salty.

    4. Prepare Pastry: Roll out the puff pastry on a lightly floured surface and cut it into squares, approximately 10cm by 10cm.

    5. Fill and Fold: Place a spoonful of the spinach and feta mixture in the centre of each pastry square. Fold the pastry over to create a triangle and press the edges together to seal. You can use a fork to crimp the edges for a decorative finish.

    6. Egg Wash: Brush each parcel with the beaten egg to give them a lovely golden colour when baked.

    7. Bake: Place the parcels on a baking tray lined with parchment paper and bake in the oven for about 20-25 minutes, or until they are puffed up and golden brown.

    8. Serve and Enjoy: Allow them to cool slightly before serving. These parcels are delightful warm or at room temperature, perfect for any occasion!
