    Preparation: Start by taking the beef eye fillet out of the fridge and allowing it to come to room temperature, around 30-60 minutes beforehand. This ensures even cooking. Meanwhile, prepare your BBQ for indirect cooking by heating one side to a medium-high temperature.

    Seasoning: Pat the fillet dry with kitchen paper and generously season it with salt and freshly ground black pepper. You can also rub it with a bit of olive oil and garlic or your choice of herbs, such as thyme or rosemary, to enhance the flavour.
