• Sweet and Tangy Meatloaf: Cooking with Katie Cross

    As the sun dipped below the horizon, casting a warm glow in my kitchen, I prepped for one of my all-time favourite comfort dishes: Sweet and Tangy Meatloaf. The aroma of sautéed onions and garlic wafted through the air, an invitation to indulge in the cosy flavours of home.

    In a large bowl, I combined succulent minced beef with a medley of herbs and spices, each ingredient thoughtfully selected to create a harmonious blend. The pièce de résistance was the sweet and tangy glaze: a delightful concoction of ketchup, brown sugar, and Worcestershire sauce. As I spread it lovingly over the meatloaf, I envisioned the sticky, caramelised topping that awaited us after baking—a true feast for the senses.

    Once nestled in the oven, I cleaned up my worktop, allowing the anticipation to build.
