Making your own beef jerky at home is a rewarding process that allows you to customise flavours to your taste, whether you prefer a sweet, spicy, or peppered variety. Start with a lean cut of beef, such as topside or flank steak, and slice it into thin strips, about 1/4 inch thick. This ensures even drying and a tender bite.
For a sweet jerky, marinate the strips in a mixture of soy sauce, brown sugar, and a dash of liquid smoke for 6 to 12 hours. For a spicy kick, incorporate chilli powder, cayenne pepper, and garlic powder into a soy sauce base. If peppered is your preference, add generous amounts of coarsely ground black pepper and a touch of garlic powder for added depth.
Once your meat has absorbed the marinade, pat it dry with paper towels to remove excess moisture. Arrange the strips on a tray in a dehydrator or an oven set to a low temperature (around 70°C/160°F) for several hours. You’ll know it’s done when the jerky is firm yet slightly pliable; it should not snap when bent.
