In a mixing bowl, combine the vegetables with chickpea flour (besan), a pinch of salt, freshly ground black pepper, and a blend of spices such as cumin and coriander. To enhance the flavour, you might also add chopped green chillies and coriander leaves. The mixture should be thick enough to hold its shape, but still moist.
