Recipe: Easy Tuna Croquettes
These delightful tuna croquettes are not only quick to prepare but also make for a scrumptious snack or a light meal. With minimal ingredients and simple steps, they are perfect for using up leftover tuna.
Ingredients:
- 400g tin of tuna in brine, drained
- 1 medium onion, finely chopped
- 2 boiled potatoes, mashed
- 1 large egg, beaten
- 100g breadcrumbs
- 1 tsp dried parsley (optional)
- Salt and pepper, to taste
- Olive oil for frying

In a mixing bowl, combine the drained tuna, finely chopped onion, and mashed potatoes. Mix until well combined and season with salt, pepper, and parsley if using.

Add the beaten egg to the mixture and stir until everything is evenly coated. The mixture should hold together; if it seems too dry, add a splash of water or another egg.

Shape the mixture into small patties, about the size of your palm. Coat each croquette in breadcrumbs, pressing gently to ensure they stick.

Heat a generous amount of olive oil in a frying pan over medium heat. Once hot, carefully place the croquettes in the pan, making sure not to overcrowd them.

Fry for 3-4 minutes on each side, or until golden brown and crisp.
