Apricot Bar Recipe - USA Pan
Delight in the sweet and tangy flavours of these delicious apricot bars, perfect for a midday treat or a delightful addition to your afternoon tea. This recipe, crafted with care using a USA Pan, ensures even baking and a perfectly textured base for your scrumptious apricot filling.
Ingredients:
- 225g all-purpose flour
- 100g unsalted butter, softened
- 150g granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 200g dried apricots, finely chopped
- 60ml water
- A sprinkle of icing sugar for dusting, optional
Method:
- Preheat your oven to 180°C (350°F) and grease a USA Pan with a light layer of butter or non-stick spray.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture, mixing until just combined.
- In a small saucepan, combine the chopped apricots and water. Simmer over low heat until the apricots are tender, about 5-7 minutes. Allow to cool slightly.
- Spread half of the dough mixture into the prepared pan, then layer the apricot filling on top. Dollop the remaining dough over the apricots.
- Bake in the preheated oven for approximately 25-30 minutes or until the top is golden brown and a skewer inserted into the centre comes out clean.
- Allow to cool in the pan before slicing into bars. Dust with icing sugar if desired, and enjoy the fruity goodness with a cup of tea!
